Country Cornbread Eggs Thursday, November 1, 2007


1 1/2 cups cornbread, crumbled
2 cups cheddar cheese, shredded
1/2 lb sausage, fried, crumbled and drained (or use 8 oz cubed ham instead)
6 eggs, beaten
1 1/2 cups milk
1 TBSP hot sauce (or to taste)
1/4 tsp black pepper
1/2 tsp salt


In a 9x13" pan, which has been sprayed with cooking oil spray, sprinkle the cornbread evenly. Sprinkle sausage (or ham) over cornbread and the cheese over the meat. Beat together all remaining ingredients and pour over bread and cheese mixture. Bake at 375 deg for about 40 minutes or until eggs are set in the middle. Serve hot.
