A Dollywood Recipe

1 head iceberg lettuce
1 stalk romaine lettuce
14 grape tomatoes
1 cup red onion, chopped
1/2 cup shredded carrots
6 boiled eggs, sliced
1/2 cup crumbled blue cheese
1/2 cup potato sticks
2 cups blackened prime rib


Cook the blackened prime rib to your liking. Cut into strips. (This is a great way to use up left overs). In a large bowl, break up iceberg lettuce and romaine. Add the tomatoes, onions, carrots, boiled eggs, blue cheese crumbles and potato sticks. Toss lightly. Top salad with prime rib strips. Add the dressing of your choice. At Dollywood, they use Raspberry vinaigrette or Caesar dressing.
