Peanut Peanut Butter Pie Friday, October 19, 2007

Ingredients

3 eggs
1/2 cup sugar
2 TBSP flour
1 cup light corn syrup
1/4 cup peanut butter
1 cup roasted, unsalted, peanuts
1 9" deep dish pie shell, unbaked

Directions

Beat the eggs thoroughly. Mix sugar and flour and add to eggs. Beat to mix. Add corn syrup and peanut butter and continue to beat until completely mixed. Scatter the peanuts evenly in the bottom of the pie shell and pour the pie mixture evenly over them. Place in a 350 deg oven. Immediately reduce heat to 325 and bake about one hour or until puffed and brown. Allow to cool before serving.
