1/2 cup butter, softened
1/4 cup white sugar
1 cup plain flour
2/3 cup dried apricots
1 cup water
2 eggs
1 cup light brown sugar, packed
1/3 cup plain flour
1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1 tsp lemon juice
1 cup chopped walnuts
confectioners sugar


Preheat oven to 325 deg. Mix butter, white sugar and 1 cup flour to form soft crumbs. Press into the bottom of an ungreased 9x13 pan. Bake for 20 minutes or until lightly brown. In a small pan, bring apricots and water to a boil. Reduce heat and simmer for about 10 minutes. Drain and chop. Allow to cool. In another bowl, beat eggs and brown sugar together. Stir in 1/3 cup flour, baking powder, salt, vanilla and lemon juice. Fold in nuts and apricots. Pour over prepared crust and spread lightly. Return to preheated oven and bake about 20 minutes or until top is firm to the touch. Cool and dust with confectioners sugar before cutting into squares.
