Sweet Potato Cream Cheese Pie Wednesday, October 17, 2007
1 large sweet potato, baked, peeled and mashed (about 1 cup)
8 oz pkg cream cheese, softened
1 cup sugar
1 tsp vanilla
2 tsp nutmeg
1 9" deep dish pie shell, unbaked
In a large mixer with the flat paddle combine sweet potato and cream cheese. Beat in sugar. Add eggs, one at a time, beating between each egg. Stir in vanilla and nutmeg and turn into pie shell. Bake in a 350 deg oven about 50 minutes or until puffed and brown. Allow to cool before slicing. This will puff and then settle when it cools.
