Pumpkin Cheesecake Pie Tuesday, October 16, 2007

Ingredients

1 cup pumpkin
6 TBSP flour (divided)
4 eggs (divided)
1 cup sugar (divided)
1/2 tsp each cinnamon, nutmeg and ginger
5 oz evaporated milk
8 oz cream cheese
1/2 cup sour cream
1 tsp vanilla
1 9" deep dish pie shell, unbaked

Directions

Mix together the pumpkin, 3 TBSP flour, 2 eggs, one half cup sugar and the spices with the evaporated milk. Blend completely and place into pastry shell. Smooth the top. Blend together the cream cheese, sour cream, 2 eggs, vanilla and one half cup sugar. Pour over the pumpkin mixture. Bake in a preheated 450 deg oven about 10 minutes. Reduce heat to 350 deg and bake for another 35 to 40 minutes or until lightly brown and just firm to the touch. Cool completely before slicing.
