A Dollywood Recipe

2 Green Tomatoes- sliced
1 cup Milk
2 cups Cornmeal mix
2 cups Panko crumbs
¼ cup Onion Bacon dressing

Onion Bacon dressing:
2 TBSP Yellow onion –diced
¼ cup Cooked bacon- diced
½ cup Mayonnaise
1 TBSP cider vinegar
4 drops Tabasco
¼ tsp Black pepper


For dressing: place all ingredients into food processor and pulse for 15 seconds. Ready to serve.

For Tomatoes:
Place milk, cornmeal and Panko crumbs into separate medium sized bowls. Dredge tomatoes into cornmeal mix then dip into milk. Coat with panko crumbs well and set aside. When tomatoes are ready heat oil in skillet until it reaches 325 degrees. Carefully place tomatoes’ in oil and fry until golden brown on both sides.

Arrange tomatoes on plate and set dressing on side.

Please Note: This is the dressing that was used on the great sandwich we showed last Friday.
