Pumpkin Pecan Pie Monday, October 28, 2013


Pumpkin layer:
1 ½ cups pumpkin (canned works fine)
2 TBSP butter, melted
¼ cup sugar
1 egg
¼ cup milk
¼ tsp nutmeg
¼ tsp allspice
Pecan layer:
1 cup pecans
¼ cup light corn syrup
2 TBSP butter, melted
2 eggs
¼ cup light brown sugar
pinch of salt
unbaked 9 inch deep dish pie shell.


Mix all ingredients for the pumpkin layer and spread evenly in unbaked pie shell. Sprinkle pecans evenly over the top. Blend remaining ingredients for the pecan layer and pour over pecans. Place in a preheated 350 deg oven and bake for about 40 minutes or until puffed and brown. Allow to cool completely before serving.
