Diary of a Localvore: January is National Soup Month

The cold weather sets the tone for a must-have, homemade soup.  Since January is National Soup Month, go ahead and pull out your big stock pot and start a pot of your favorite.  Chicken noodle, vegetable beef, potato, tomato…the combinations are endless. Whether you’re clearing out your refrigerator or starting fresh, soup delights the family!

A good broth produces a good soup. I use beef soup bones, leftover roasted chicken with the bones and sometimes just vegetables to produce different broths. Don’t forget to include the onion skins & celery leaves in the broth.
I was able to freeze many vegetables over the summer from the local markets and my garden. My freezer is full and even though it does not feel like it now, spring will be here soon. I need to have my freezer ready to go for the next harvest. Therefore, my husband has now challenged me to use only food in the refrigerator/freezer. I accept the challenge and will begin this week. Soup’s on!
